African Chicken & Peanut Stew

This is a slightly spicy stew that goes marvelously with a side of ugali. It’s guaranteed to be your new lunch-time favorite!

  • Country Choice assorted pack
  • 3 tbsp. sunflower oil
  • 1 large onion, chopped
  • 1 tbsp. ginger-garlic paste
  • 1 1/2 tsp. cumin powder
  • 1 tsp. chili powder
  • 2 stock cubes
  • Salt & pepper to taste
  • 1 tbsp. water
  • 1 sweet potato, cut into cubes
  • 1 cup tomatoes
  • 1/2 cup peanut butter mixed with 1/4 cup boiling water
  • 1/4 cup crushed peanuts
  • 1 cup boiling water
  • Chopped coriander leaves and peanuts for garnish
  • Serve with steamed Rice

Method

  • Heat oil in a pan and cook onions till translucent. Add ginger-garlic paste, cumin powder, chili powder, stock cubes, salt and pepper and cook for a minute.
  • Add water and let simmer for 1-2 minutes until the spices are fried well. Stir together the sweet potatoes, chicken, tomatoes, peanut butter (Mixed with boiling water) and peanuts. Add 1 more cup of boiling water.
  • Cover the pot with a lid and allow simmering for 35 minutes. Can be served with white rice, but we prefer a good portion of ugali instead!
