African Chicken & Peanut Stew

INGREDIENTS
This is a slightly spicy stew that goes marvelously with nshima. It’s guaranteed to be your new lunch-time favorite!

large onion, chopped

tsp. cumin powder

tbsp. water

stock cubes

cup tomatoes

cup crushed peanuts
Serve with steamed Rice
Chopped coriander leaves and peanuts for garnish

tbsp. ginger-garlic paste

tsp. chili powder
Salt & pepper to taste

sweet potato, cut into cubes

cup peanut butter mixed with 1/4 cup boiling water

cup boiling water
Method
- Heat oil in a pan and cook onions till translucent. Add ginger-garlic paste, cumin powder, chili powder, stock cubes, salt and pepper and cook for a minute.
- Add water and let simmer for 1-2 minutes until the spices are fried well. Stir together the sweet potatoes, chicken, tomatoes, peanut butter (Mixed with boiling water) and peanuts. Add 1 more cup of boiling water.
- Cover the pot with a lid and allow simmering for 35 minutes. Can be served with white rice, but we prefer a good portion of nshima instead!
